The Best Meatloaf: smoky, spicy, rich and delicious

A good meatloaf is the best kind of comfort food…and there are so many variations! I wanted to create the perfect meatloaf for my husband and myself…one that isn’t too dense, has that ketchup-y glaze but also has some spice, some smoke and makes you want to go for bite after bite. After a few tries and tweaking, I ended up with the meatloaf I imagined and we love it! I hope you do too, but feel free to tweak things to get your own dreamy meatloaf. Mashed potatoes are a great accompaniment.

Serves: about 4 servings
Time: 1.5 hours (including cooking/resting time)

Ingredients for the meatloaf:
2 eggs
1/3 cup milk
3 Tbsp Worcestershire sauce
1/2 cup Panko flakes
1 Tbsp olive oil
1 medium onion, diced
3 cloves garlic
1 Tbsp Italian seasoning
2 tsp chipotle powder
1 tbsp tomato paste
1 lb ground beef
1 lb ground pork
2 Tbsp salt
Black pepper to taste
2 Tbsp Parsley
1 tsp Liquid smoke
2 Tbsp ketchup

Ingredients for the glaze:
3/4 cup Ketchup
2 tsp White vinegar
1 1/2 Tbsp Brown sugar
1/2 tsp each Garlic and onion powder
1 tsp Chipotle Chile powder
2 tsp Worcestershire sauce
1 tsp Black pepper
1 tsp liquid smoke

Preheat the oven to 350 F.

In a small bowl, beat the eggs until combined and add the milk, Worcestershire and panko flakes. Mix well and let sit for 15-20 minutes.

Meanwhile, in a large skillet, heat the olive oil over medium heat. Sauté onion and garlic in olive oil for 3-4 minutes, until the onion is translucent. Add the Italian seasoning, chipotle chile powder and tomato paste. Mix completely and cook for 2-3 more minutes. Set aside to let cool.

In a large bowl, combine the ground meats, salt & pepper, fresh parsley, liquid smoke, and ketchup as well as cooled onion mixture and combine completely by mixing with your hands. Add bread crumb and milk mixture and combine until fully blended.

Put a sheet of heavy duty foil to cover a baking sheet. Empty the bowl of meatloaf mixture onto the foil and shape into a loaf, approximately 10″ long, 4-5″ wide, and about 2″ thick.

Put the meatloaf in the oven and bake for 40 mins. During the baking time, mix all the glaze ingredients in a bowl until blended and set aside until the 40 minutes bake time is done. Brush all of the glaze on the top of the meatloaf and return to the oven. Cook an additional 20 mins until the glaze is set and a bit darker and the internal temperature of the meatloaf reaches 160 F. Remove the meatloaf from the oven and let it rest for 10-15 mins.

Cut into slices of the desired thickness and serve. Bon appétit and enjoy your delicious meatloaf!
